Total destemming, prolonged but gentle pelicular maceration and alcoholic fermentation in robotic lagares, at a temperature of 26ºC

Ageing

9 months aging in new French oak barrels

It pairs very well with oven-roasted lamb or kid, grilled red meat, pork loin and hard cured cheese.
