Fragrance

On the nose it reveals an unusual complexity, aroma of peach and ripe orange, some wet stone mineral, all involved in smooth smoky notes.

Taste

Notorious volume in the mouth, full-bodied but still elegant and harmonious. It ends with citrus, crunchy freshness that gives it persistence and longevity

Production Process

Manual selection of grapes at the entrance to the cellar. Total destemming and cold pelicular maceration for 8 hours. Gentle pneumatic pressing, followed by fermentation in oak barrels. French oak lightly toasted at a controlled temperature of 15ºC

Ageing

“Elevage” for 9 months in the same barrels (35% new wood) “en sur lie”, suffering “battonage” every 15 days

Gastronomical suggestion

Excellent to accompany fatty fish or baked in the oven, cod in all its variants, grilled white meats and soft sheep cheeses
